a traditional middle eastern ingredient to add brightness to all sorts of dishes, preserved lemons are simply lemons lactofermented in salt until softened and fragrant. our preserved lemons (and the varieties listed below) are pureed into a paste for easy application; use as you would miso or a seasoning salt!
